  • 8 oz mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced For added flavor.
  • 1 teaspoon thyme
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Parsley for garnish

Preparation
  1. Chop the chicken breast into bite-sized pieces and slice the mushrooms. Mince the garlic cloves.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
Cooking
  1. Add the chicken pieces to the skillet. Season with salt and pepper. Cook until browned and cooked through, approximately 8-10 minutes.
  2. Add the minced garlic and sliced mushrooms. Sauté for about 5 minutes or until the mushrooms are tender.
  3. Sprinkle in the thyme and pour in the chicken broth, stirring to combine. Let it simmer for about 10 minutes.
  4. Taste and adjust seasoning if necessary. Garnish with freshly chopped parsley before serving.

Notes

Consider swapping chicken breast for chicken thighs for a richer flavor. Be sure to sauté the mushrooms thoroughly to prevent rubberiness. Don’t rush the browning of the chicken—it builds flavor.
