Preparation
- Pat the chicken breasts dry and season generously with salt and pepper on both sides.
Cooking
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for about 6-7 minutes on each side until golden brown and fully cooked. Remove from the skillet and set aside.
- In the same skillet, lower the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn.
- Pour in the heavy cream and stir until fully combined. Gradually whisk in the grated Parmesan cheese until the sauce is creamy and smooth. Stir in Italian seasoning and adjust seasoning as necessary.
- Return the chicken to the skillet, coating each piece with the sauce. Let it simmer for an additional 2-3 minutes. Serve hot, garnished with fresh parsley.
Notes
For best results, do not overcrowd the pan when cooking the chicken to achieve a proper sear.
