For the Bars
  • 2 cups grated zucchini Squeeze out excess moisture.
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 cup chopped nuts Optional
For the Frosting
  • 1 cup caramel frosting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish or line it with parchment paper.
  3. In a large bowl, combine flour, baking soda, baking powder, salt, and cinnamon. Stir well and set aside.
  4. In another bowl, blend the granulated sugar, brown sugar, and vegetable oil until combined.
  5. Beat in the eggs one at a time, followed by the vanilla extract. Mix until smooth.
  6. Gradually add the dry ingredients to the wet mixture. Stir until just combined, it's okay if a bit lumpy.
  7. Gently fold in the grated zucchini and chopped nuts.
Baking
  1. Pour the batter into the prepared baking dish and spread it evenly.
  2. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow the bars to cool completely.
  4. Spread the caramel frosting generously over the top.
Serving
  1. Cut into squares, serve, and enjoy!

For best results, squeeze out excess moisture from zucchini and adjust baking time as necessary. Enjoy experimenting with different frostings like cream cheese for a twist.
