Ingredients
  

Main Ingredients
  • 2 cups grated zucchini (packed) Use fresh, young zucchini for best results.
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped nuts (optional) These can be added for extra texture.
  • 1 cup caramel sauce (for frosting)

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. Grease a 9×13-inch baking dish with vegetable oil or line it with parchment paper.
  3. In a bowl, combine all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk together.
  4. In another bowl, whisk together eggs, vegetable oil, and vanilla extract. Add in the grated zucchini and mix well.
  5. Fold the wet ingredients into the dry ingredients until just combined. Optionally, add chopped nuts.
  6. Pour the batter into the prepared baking dish and smooth it out evenly.
Baking
  1. Bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the bars to cool completely.
Frosting
  1. Drizzle the cooled bars with caramel sauce before cutting into squares.

Notes

Bars can last up to 5 days in the fridge and can be frozen for up to 2 months. Reheat by thawing in the fridge and warming in the microwave.
