For the Meatloaf Muffins
  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup onions, finely chopped
  • 1/2 cup milk
  • 1/4 cup ketchup, plus extra for serving
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • to taste Salt and black pepper
For the Mashed Potato Frosting
  • 2 cups mashed potatoes (prepared) Can be homemade or store-bought
  • to taste Fresh parsley, for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
  2. In a large bowl, combine the ground beef, breadcrumbs, chopped onions, milk, ketchup, egg, garlic powder, Worcestershire sauce, salt, and pepper. Mix until just combined; avoid overmixing.
  3. Spoon the meatloaf mixture evenly into the muffin tin cups, filling each one about three-quarters full.
Cooking
  1. Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the meat is no longer pink in the center.
  2. While the muffins are baking, prepare or reheat the mashed potatoes. Whip them with a little milk or butter for a fluffier texture.
Assembly
  1. Once the muffins are done, let them cool for a few minutes. Top each muffin with a generous serving of mashed potatoes like frosting.
  2. Drizzle a little extra ketchup over the top and garnish with fresh parsley if desired. Serve warm.

To achieve the best results, don’t overmix the ingredients, experiment with flavors, use leftover vegetables, and adjust the cooking time as needed.
