Pastry Ingredients
  • 1 package puff pastry sheets, thawed
  • 1 egg beaten, for egg wash
  • Powdered sugar, for dusting (optional)
Filling Ingredients
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 can cherry pie filling (or any preferred fruit filling)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. On a lightly floured surface, roll out the puff pastry sheets and cut them into squares (about 4x4 inches).
  3. In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Beat until smooth.
Assembling and Baking
  1. Place a spoonful of the cream cheese filling in the center of each pastry square. Top with a spoonful of cherry pie filling. Fold the corners of the pastry square towards the center, pinching to seal.
  2. Brush each danish with the beaten egg.
  3. Place the danishes on a lined baking sheet and bake for 15-20 minutes, or until golden and puffed.
  4. Allow to cool slightly and dust with powdered sugar if desired. Enjoy warm or at room temperature.

Notes

Feel free to substitute the cherry filling with blueberries or a mix of berries. Watch closely as they bake, starting to check for golden color around the 15-minute mark. Avoid overfilling to prevent messy pastries.
