Preparation
- Preheat your oven to 375°F (190°C).
- On a lightly floured surface, roll out the puff pastry sheets and cut them into squares (about 4x4 inches).
- In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Beat until smooth.
Assembling and Baking
- Place a spoonful of the cream cheese filling in the center of each pastry square. Top with a spoonful of cherry pie filling. Fold the corners of the pastry square towards the center, pinching to seal.
- Brush each danish with the beaten egg.
- Place the danishes on a lined baking sheet and bake for 15-20 minutes, or until golden and puffed.
- Allow to cool slightly and dust with powdered sugar if desired. Enjoy warm or at room temperature.
Notes
Feel free to substitute the cherry filling with blueberries or a mix of berries. Watch closely as they bake, starting to check for golden color around the 15-minute mark. Avoid overfilling to prevent messy pastries.
