Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef. Drain any excess grease once it’s fully cooked.
- Stir in the taco seasoning according to the packet instructions and let the mixture simmer for a few minutes until well combined.
- In a large bowl, combine the seasoned beef, sour cream, black beans, and diced tomatoes. Mix well until everything is evenly distributed.
Assembly
- In a greased 9x13 inch baking dish, layer half of the crushed tortilla chips, followed by half of the beef mixture, and top with a layer of cheese.
- Repeat this layering once more, finishing with a generous sprinkle of cheese on top.
Cooking
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
Serving
- Once out of the oven, let it sit for about 5 minutes. Dish it out and top with your favorite fresh ingredients, like avocado or cilantro.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days or freeze for 2-3 months. Reheat in the oven or microwave.
