Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 2 cups shredded cheese (your choice) Mix and match cheeses for flavor.
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 3 cups tortilla chips, crushed slightly
Optional Toppings
  • avocado For topping.
  • jalapenos For topping.
  • fresh cilantro For topping.
  • salsa For topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef. Drain any excess grease once it’s fully cooked.
  3. Stir in the taco seasoning according to the packet instructions and let the mixture simmer for a few minutes until well combined.
  4. In a large bowl, combine the seasoned beef, sour cream, black beans, and diced tomatoes. Mix well until everything is evenly distributed.
Assembly
  1. In a greased 9x13 inch baking dish, layer half of the crushed tortilla chips, followed by half of the beef mixture, and top with a layer of cheese.
  2. Repeat this layering once more, finishing with a generous sprinkle of cheese on top.
Cooking
  1. Cover the dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
Serving
  1. Once out of the oven, let it sit for about 5 minutes. Dish it out and top with your favorite fresh ingredients, like avocado or cilantro.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for 2-3 months. Reheat in the oven or microwave.
