  • 1 cup chicken broth

  • 1 medium bell pepper, chopped

Preparation
  1. Begin by chopping your onion and bell pepper. Set them aside.
Cooking
  1. In a large pot or skillet, place the boneless, skinless chicken breasts. Add chicken broth, taco seasoning, diced tomatoes (if using), and a sprinkle of salt and pepper.
  2. Toss in the chopped onion and bell pepper, which will infuse the dish with flavor.
  3. Bring the pot to a boil over medium-high heat, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the chicken is cooked through.
  4. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot, mixing it well with the sauce.
  5. Allow it to simmer for an additional 5 minutes for optimal flavor.
Serving
  1. Load up your tacos with the shredded chicken and top with your favorite ingredients, like avocado, cheese, or lime.

Notes

Store leftovers in the refrigerator for up to 3-4 days or freeze for up to 3 months. Reheat on the stove with a splash of broth to maintain moisture.
