Preparation
- In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the minced garlic for about a minute until fragrant.
- Add the chopped spinach and cook until wilted (around 2-3 minutes). Season with salt and pepper, and then set aside.
Assembly
- On one slice of bread, layer the mozzarella cheese, followed by the spinach mixture, and then the feta cheese. Top it off with the other slice of bread.
Cooking
- In the same skillet, add the remaining tablespoon of olive oil. Once hot, carefully place the sandwich in the skillet and press it down slightly with a spatula.
- Cook for about 3-5 minutes on one side until it's golden brown. Flip the sandwich and repeat on the other side until both sides are crispy and the cheese is melty.
Serving
- Remove from the skillet and allow to cool for a minute before slicing it in half. Serve with your favorite salad or dip for added flair.
Notes
Consider substituting the feta cheese with goat cheese or a dairy-free option. Add sesame seeds inside the sandwich for extra texture. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
