  • 2 slices whole-grain bread or your choice of bread
  • 1 cup fresh spinach washed and chopped
  • 1/2 cup mozzarella cheese shredded
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons olive oil for grilling
  • 1 clove garlic minced

Method
 

Preparation
  1. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the minced garlic for about a minute until fragrant.
  2. Add the chopped spinach and cook until wilted (around 2-3 minutes). Season with salt and pepper, and then set aside.
Assembly
  1. On one slice of bread, layer the mozzarella cheese, followed by the spinach mixture, and then the feta cheese. Top it off with the other slice of bread.
Cooking
  1. In the same skillet, add the remaining tablespoon of olive oil. Once hot, carefully place the sandwich in the skillet and press it down slightly with a spatula.
  2. Cook for about 3-5 minutes on one side until it's golden brown. Flip the sandwich and repeat on the other side until both sides are crispy and the cheese is melty.
Serving
  1. Remove from the skillet and allow to cool for a minute before slicing it in half. Serve with your favorite salad or dip for added flair.

Notes

Consider substituting the feta cheese with goat cheese or a dairy-free option. Add sesame seeds inside the sandwich for extra texture. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
