Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, drizzle olive oil over the chicken breasts and season with salt, pepper, and dried oregano.
- In a baking dish, layer the sliced zucchini and halved cherry tomatoes, then sprinkle minced garlic over the top.
Baking
- Place the seasoned chicken breasts on top of the zucchini and tomatoes, then add chopped sun-dried tomatoes on top.
- Generously sprinkle shredded mozzarella cheese over the chicken.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until chicken is cooked through and cheese is bubbling.
- Let the bake rest for a few minutes before serving.
Notes
Great served with a refreshing salad, garlic bread, or couscous. For a beverage, suggest chilled lemonade or a crisp white wine. If using leftover rotisserie chicken, add it later in the baking process to warm up without drying out.
