  • 4 pieces boneless, skinless chicken breasts
  • 3 medium zucchinis, sliced Choose medium-sized for best texture.
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese Generously sprinkle over the chicken.
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced Sprinkle over veggies for enhanced flavor.
  • 2 tablespoons olive oil Drizzle over chicken before seasoning.
  • 1 teaspoon dried oregano Season chicken with this aromatic herb.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, drizzle olive oil over the chicken breasts and season with salt, pepper, and dried oregano.
  3. In a baking dish, layer the sliced zucchini and halved cherry tomatoes, then sprinkle minced garlic over the top.
Baking
  1. Place the seasoned chicken breasts on top of the zucchini and tomatoes, then add chopped sun-dried tomatoes on top.
  2. Generously sprinkle shredded mozzarella cheese over the chicken.
  3. Cover the dish with aluminum foil and bake for 25 minutes.
  4. Remove the foil and bake for an additional 10-15 minutes, until chicken is cooked through and cheese is bubbling.
  5. Let the bake rest for a few minutes before serving.

Notes

Great served with a refreshing salad, garlic bread, or couscous. For a beverage, suggest chilled lemonade or a crisp white wine. If using leftover rotisserie chicken, add it later in the baking process to warm up without drying out.
