Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and onion, sautéing until they are soft and fragrant.
  3. Add the cubed chicken to the skillet. Season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. In a large mixing bowl, combine the sliced zucchini and halved cherry tomatoes. Toss with the chicken mixture.
  5. Transfer the mixture into a greased baking dish, spreading it out evenly. Top with shredded mozzarella cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

Notes

For added heartiness, add vegetables like bell peppers or mushrooms. Stir in a dollop of Greek yogurt or ricotta for creaminess. Check baking time a few minutes early as ovens vary.
