Ingredients
  

For the Chicken Marinade
  • 1 pound Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • to taste Salt and pepper
For the Base and Toppings
  • 2 cups Cooked brown rice or quinoa
  • 1 Cucumber, chopped
  • 1 cup Cherry tomatoes, halved
  • 1 Bell pepper, diced
  • 1/2 Red onion, thinly sliced
  • 1/4 cup Fresh parsley, chopped
  • 1/2 cup Feta cheese, crumbled (optional)
  • Tzatziki sauce or olive oil vinaigrette, for drizzling

Method
 

Preparation
  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken breasts, coating them well. Let them marinate for at least 15 minutes.
  2. While the chicken is marinating, cook the brown rice or quinoa according to the package instructions.
  3. Dice the cucumber, halve the cherry tomatoes, chop the bell pepper, and thinly slice the red onion. Set aside.
Cooking the Chicken
  1. Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F. Once cooked, let it rest before slicing.
Assembly
  1. In serving bowls, layer the cooked rice or quinoa, then add sliced chicken on top. Top with diced veggies, parsley, and feta cheese if desired.
  2. Drizzle tzatziki sauce or olive oil vinaigrette over the prepared bowls, customizing to your taste.

Notes

For a vegetarian option, swap the chicken for grilled tofu or chickpeas. To maintain the freshness, store each component separately and add dressing just before eating.
