Ingredients
  

  • 1 lb frozen or homemade meatballs
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 4 cups marinara sauce
  • 3 cups beef broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish
  • Crusty bread for serving

Equipment

Method
 

  1. In a large pot, heat olive oil over medium heat. Sauté onions for 5 minutes, then add garlic for another minute.
  2. Pour in marinara sauce and beef broth. Stir and season with Italian seasoning, salt, and pepper.
  3. Add the meatballs and bring the soup to a simmer for 15-20 minutes.
  4. Stir in mozzarella and Parmesan cheese until melted.
