  • 2 cups baby spinach
  • 8 oz pasta (fettuccine or penne)
  • salt and black pepper, to taste

  1. Cook the Pasta: Start by boiling your pasta according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Chicken: Season the chicken breasts with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes per side, or until cooked through. Remove from the skillet and set aside.
  3. Make the Sauce: In the same skillet, lower the heat and add minced garlic. Sauté for about 1 minute or until fragrant. Pour in the chicken broth and allow it to reduce slightly, about 2-3 minutes.
  4. Combine Ingredients: Add in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and fully incorporated.
  5. Add Spinach and Pasta: Toss in the baby spinach until wilted. Finally, mix in the cooked pasta and sliced chicken, ensuring everything is well coated in the creamy sauce.
