  • 1 can 15 oz white beans (such as cannellini or navy) Drained and rinsed
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar (or lemon juice for a fresh twist)
  • 1 clove garlic, minced Optional, can substitute with shallots
  • 1 teaspoon dried oregano Can substitute with fresh herbs
  • to taste salt and pepper Be cautious with salt due to bean's canning liquid
  • as needed Fresh parsley for garnish

Method
 

Preparation
  1. Drain and rinse the white beans thoroughly under cold water.
  2. In a medium bowl, whisk together the olive oil, vinegar (or lemon juice), minced garlic, oregano, salt, and pepper.
  3. Gently fold the drained beans into the marinade until each bean is coated.
  4. Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate for at least 2 hours. Overnight marination is ideal.
Serving
  1. Give the beans a gentle stir before transferring to a serving dish.
  2. Garnish with fresh parsley before serving.

Notes

For varied flavors, feel free to use fresh herbs instead of dried. Ensure to taste the marinade first to avoid over-salting. Store in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 2 months.
