For the Marinade
  • 3 tablespoons olive oil Extra virgin recommended
  • 2 tablespoons red wine vinegar Grape vinegar is an alternative
  • 1 clove garlic, minced Add more for stronger flavor
  • 1 teaspoon dried oregano Substitute with herbs of your choice
  • to taste Salt and pepper Adjust for personal preference
Main Ingredients
  • 1 can (15 oz) white beans, drained and rinsed Choose canned beans for convenience
  • to garnish Chopped fresh parsley Optional for presentation

Method
 

Preparation
  1. Drain and rinse the white beans under cool water.
  2. In a medium bowl, whisk together the olive oil, grape vinegar, minced garlic, dried oregano, salt, and pepper to create the marinade.
  3. Add the rinsed beans to the bowl with the marinade and gently toss to coat them thoroughly.
  4. Taste the beans and adjust seasoning if necessary.
  5. Allow the beans to marinate at room temperature for at least 30 minutes, or refrigerate for a few hours or overnight for enhanced flavor.
  6. Before serving, sprinkle chopped fresh parsley on top.

Notes

Store in an airtight container in the refrigerator for 3-5 days. Serve them cold as a snack or gently warm on the stove before serving.
