  • ¼ cup pure maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract ensure it's alcohol-free
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup chopped nuts optional, use walnuts or pecans

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).
  3. Mix in the maple syrup, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until just combined, avoiding overmixing.
  5. Using a cookie scoop or two tablespoons, drop rounded balls of dough onto the prepared baking sheets, leaving space for spreading. Flatten slightly if a thinner cookie is desired.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until the cookies are golden brown around the edges.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, consider substituting with Halal-approved vegan butter, experimenting with add-ins like walnuts or a dash of cinnamon, and avoiding overbaking to ensure a chewy center. Store cookies in an airtight container for up to one week or freeze for three months.
