Ingredients

Base Ingredients
  • 2 pieces ripe bananas Choose ripe bananas for better sweetness.
  • 2 tablespoons peanut butter Can be substituted with almond butter.
  • 2 tablespoons cocoa powder Unsweetened cocoa powder works best.
  • 1 tablespoon honey or maple syrup For sweetness; use maple syrup for a vegan option.
  • 1/4 cup chopped mixed nuts Almonds or walnuts can be used instead.
Chocolate Drizzle
  • optional Dark chocolate for drizzling Melted and cooled before drizzling.

Method

Preparation
  1. Peel the ripe bananas and cut them into thick slices, about 1-inch thick.
  2. In a mixing bowl, combine the peanut butter, cocoa powder, and honey or maple syrup. Stir until the mixture is smooth.
Assembly
  1. Spread a layer of the peanut butter mixture onto one banana slice, then top with another slice to create a banana sandwich. Repeat with remaining slices.
  2. Roll the banana sandwiches in chopped mixed nuts or sprinkle nuts on top.
Freezing
  1. Place banana bites on a parchment-lined tray and freeze for about 2 hours, or until solid.
  2. Melt dark chocolate in the microwave or using a double boiler; let it cool slightly before drizzling over the frozen bites.
Serving
  1. Enjoy frozen directly from the freezer. Store any leftovers in an airtight container for up to a week.

Notes

To keep fresh, store in an airtight container in the freezer. Allow to sit at room temperature for a minute for softer bites before eating.
