Preparation
- Peel the ripe bananas and cut them into thick slices, about 1-inch thick.
- In a mixing bowl, combine the peanut butter, cocoa powder, and honey or maple syrup. Stir until the mixture is smooth.
Assembly
- Spread a layer of the peanut butter mixture onto one banana slice, then top with another slice to create a banana sandwich. Repeat with remaining slices.
- Roll the banana sandwiches in chopped mixed nuts or sprinkle nuts on top.
Freezing
- Place banana bites on a parchment-lined tray and freeze for about 2 hours, or until solid.
- Melt dark chocolate in the microwave or using a double boiler; let it cool slightly before drizzling over the frozen bites.
Serving
- Enjoy frozen directly from the freezer. Store any leftovers in an airtight container for up to a week.
