For the pasta and seafood
  • 8 ounces elbow macaroni Cooked until al dente
  • 1 tablespoon olive oil For sautéing
  • 1 small onion, finely chopped Sautéed until translucent
  • 2 cloves garlic, minced Sautéed until fragrant
  • 1 cup cooked lobster meat, chopped
  • 1 cup cooked crab meat, shredded
  • 1 cup cooked shrimp, chopped (peeled and deveined)
For the cheese sauce
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
Seasonings and toppings
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper Optional for a kick
  • Salt and pepper to taste Salt and pepper
  • 1 cup breadcrumbs For topping
  • Fresh parsley, chopped For garnish

Method

Preparation
  1. Cook the macaroni according to package instructions in a large pot of boiling salted water until al dente. Drain and set aside.
  2. In the same pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes. Stir in the garlic and sauté until fragrant, about 1 minute.
Make the cheese sauce
  1. Sprinkle the flour over the onions and garlic, stirring to combine. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens and bubbles.
  2. Lower the heat and mix in the shredded cheddar and mozzarella cheeses until melted and smooth.
  3. Stir in the chopped lobster meat, crab meat, and shrimp, along with the paprika, cayenne pepper (if using), salt, and pepper.
Combine and bake
  1. Fold the cooked macaroni into the seafood cheese sauce, ensuring everything is well mixed.
  2. Preheat your oven to 350°F (175°C). Pour the macaroni and cheese into a greased casserole dish.
  3. Sprinkle breadcrumbs evenly over the top for a crispy finish.
  4. Bake in the oven for 20-25 minutes, or until the top is golden and bubbly.
  5. Once out of the oven, garnish with fresh parsley before serving.

Notes

Ensure your seafood is precooked to avoid any rubbery texture during baking. Allow the dish to cool fully before storing in an airtight container. It can last in the refrigerator for up to 3-4 days, or freeze for longer storage.
