  • 1 cup lentils (any variety, preferably green or brown)
  • 2 cups vegetable broth
  • 8 pieces corn tortillas Ensure they are not contaminated with any forbidden ingredients
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon cumin To provide warmth
  • 1 teaspoon chili powder Add more if you prefer extra heat
  • 1 cup shredded cheese (optional) Use Halal-friendly cheese
  • 1 cup enchilada sauce Look for a Halal-certified brand
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method
 

Preparation
  1. Rinse the lentils thoroughly under cold water and combine them with vegetable broth, a pinch of salt, and cumin in a pot. Bring to a boil, then reduce to a simmer. Cook for about 15-20 minutes until tender but not mushy. Drain any extra liquid and stir in the chili powder and black beans.
  2. In a dry skillet over medium heat, warm each tortilla for about 30 seconds on each side until they are pliable.
  3. Take each tortilla and spoon a generous portion of the lentil mixture in the center. Roll it up tightly and place seam side down in a greased baking dish.
Baking
  1. Pour the enchilada sauce over the rolled tortillas, ensuring each one is covered. If using cheese, sprinkle it generously over the top.
  2. Preheat the oven to 375°F (190°C) and bake for about 20 minutes, or until heated through and the cheese is melted and slightly golden.
  3. Remove from the oven, allow to cool for a few minutes, and garnish with fresh cilantro before serving.

Notes

For substitutions, feel free to replace lentils with quinoa or chickpeas, and add bell peppers or zucchini for extra veggies. Ensure tortillas are fresh and warm to avoid cracking. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
