Method
Cooking the Pasta
- Begin by boiling a large pot of salted water. Add your pasta of choice and cook according to the package instructions until al dente. Drain, reserving about a cup of the pasta water.
Sautéing Ingredients
- In a large skillet, add a drizzle of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn it!
- Toss in the fresh spinach and sauté until wilted, about 2-3 minutes.
Combining Ingredients
- Lower the heat and add the cooked pasta to the skillet. Stir in the ricotta cheese, lemon juice, and lemon zest. Mix until everything is well combined. If it looks a bit dry, feel free to add a splash of the reserved pasta water.
Finishing Up
- Add salt and pepper to taste. Continue stirring for a couple of minutes until everything is warmed through.
- Plate the pasta and finish with a sprinkle of Parmesan cheese for that extra touch of flavor!
