Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, cream the softened butter and granulated sugar together for about 3-5 minutes until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually alternate adding the dry ingredient mixture and the milk to the butter mixture, starting and ending with the dry ingredients.
- Gently fold in the lemon zest and lemon juice.
Baking
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool for 10-15 minutes in the pan, then transfer it to a wire rack to cool completely.
