Ingredients
  

Dry Ingredients
  • 1.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
Wet Ingredients
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter (softened)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup milk any kind you prefer
  • 2 zests lemons zest of
  • 0.25 cup fresh lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream the softened butter and granulated sugar together for about 3-5 minutes until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually alternate adding the dry ingredient mixture and the milk to the butter mixture, starting and ending with the dry ingredients.
  6. Gently fold in the lemon zest and lemon juice.
Baking
  1. Pour the batter into a greased loaf pan.
  2. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the loaf to cool for 10-15 minutes in the pan, then transfer it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days or in the freezer for up to 2 months. Reheat in the oven to enjoy fresh-baked flavor.
