  • 2 tablespoons olive oil Extra virgin preferred
  • to taste Salt and pepper Adjust seasoning as necessary

Preparation
  1. Place the chicken breasts in a large bowl.
  2. In a separate bowl, combine lemon juice, minced garlic, chopped rosemary, olive oil, salt, and pepper. Stir until well mixed.
  3. Pour the marinade over the chicken breasts, ensuring each piece is fully coated. Cover and let it sit for at least 30 minutes (or up to 2 hours in the fridge) for enhanced flavor.
Cooking
  1. Preheat your oven to 400°F (200°C).
  2. Transfer the marinated chicken to a baking dish. Bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  3. Let the chicken rest for a few minutes before slicing.
Serving
  1. Serve with your favorite sides, such as roasted vegetables or a fresh salad.

Notes

Substitutions for rosemary can be made with thyme or oregano. Ensure chicken breasts are of even thickness for uniform cooking. Store leftovers in an airtight container for up to 3-4 days, or freeze for up to 3 months. Reheat in the oven at 350°F (175°C).
