  • 2 pounds baby potatoes, halved or quartered Opt for baby potatoes for a tender bite.
  • 3 tablespoons olive oil Can be substituted with avocado oil.
  • 1 tablespoon fresh lemon juice Can be substituted with lime juice for a tangy twist.
  • 4 cloves garlic, minced Feel free to add more for richer flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped for garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss the halved or quartered baby potatoes with olive oil, lemon juice, minced garlic, salt, and black pepper.
  3. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
Cooking
  1. Place the baking sheet in the oven and roast for about 25-30 minutes. Stir halfway through.
  2. Once golden brown and tender, remove from the oven and transfer to a serving dish. Sprinkle with fresh parsley.

Notes

Store in the refrigerator for up to 3 days and can be frozen for 2 months. Reheat in a preheated oven at 350°F (175°C) for 15-20 minutes.
