Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the lemon juice, minced garlic, chopped rosemary, olive oil, salt, and pepper.
- Place the chicken breasts in a shallow dish and pour the marinade over them, ensuring each piece is well coated. Let it marinate for at least 20 minutes.
Cooking
- Place the marinated chicken onto a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Optionally, broil the chicken for the last 5 minutes for extra crispness, keeping an eye on it.
Serving
- Remove from the oven and let the chicken rest for a few minutes before serving with your favorite sides.
Notes
For substitutions, dried rosemary can be used at a third of the amount of fresh. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) until warmed through.
