Chicken and Marinade
  • 4 pieces chicken breasts Ensure they are boneless and skinless for the best texture.
  • 2 pieces lemons, juice Freshly squeezed is recommended for best flavor.
  • 4 cloves garlic, minced Adjust quantity based on garlic preference.
  • 2 tablespoons fresh rosemary, chopped For a stronger flavor, consider fresh herbs over dried.
  • 3 tablespoons olive oil Extra virgin is preferred.
  • to taste salt and pepper Season according to personal preference.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the lemon juice, minced garlic, chopped rosemary, olive oil, salt, and pepper.
  3. Place the chicken breasts in a shallow dish and pour the marinade over them, ensuring each piece is well coated. Let it marinate for at least 20 minutes.
Cooking
  1. Place the marinated chicken onto a baking sheet lined with parchment paper.
  2. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  3. Optionally, broil the chicken for the last 5 minutes for extra crispness, keeping an eye on it.
Serving
  1. Remove from the oven and let the chicken rest for a few minutes before serving with your favorite sides.

Notes

For substitutions, dried rosemary can be used at a third of the amount of fresh. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) until warmed through.
