Preparation
- Begin by draining the butter beans and giving them a gentle rinse under cold water.
- In a medium-sized skillet, melt the 2 tablespoons of butter over medium heat until it’s bubbly and fragrant.
- Carefully add the drained butter beans into the skillet. Stir gently to coat them in the butter.
- Zest the lemon first, then cut the lemon in half and squeeze the juice over the beans, being sure to catch any seeds.
- Add the chopped fresh dill along with salt and pepper to taste. Stir gently to combine all ingredients.
- Continue cooking for about 5-7 minutes, or until the beans are warmed through and soft, but not mushy.
- Remove from heat and serve warm as the main dish or side.
Notes
For best results, serve immediately after cooking. Leftovers can be stored for up to 3 days and can be frozen for up to 2 months. Reheat gently in a skillet, adding fresh lemon juice or extra butter to revive flavors.
