  • 2 cans butter beans, drained Canned butter beans for convenience
  • 2 tablespoons butter Substitute with olive oil for a lighter version
  • 1 lemon Juice and zest from 1 lemon Use fresh lemon for the best flavor
  • 2 tablespoons fresh dill, chopped Fresh dill preferred; dried dill can be used in a pinch
  • to taste Salt and pepper Adjust seasoning to personal preference

Preparation
  1. Begin by draining the butter beans and giving them a gentle rinse under cold water.
  2. In a medium-sized skillet, melt the 2 tablespoons of butter over medium heat until it’s bubbly and fragrant.
  3. Carefully add the drained butter beans into the skillet. Stir gently to coat them in the butter.
  4. Zest the lemon first, then cut the lemon in half and squeeze the juice over the beans, being sure to catch any seeds.
  5. Add the chopped fresh dill along with salt and pepper to taste. Stir gently to combine all ingredients.
  6. Continue cooking for about 5-7 minutes, or until the beans are warmed through and soft, but not mushy.
  7. Remove from heat and serve warm as the main dish or side.

Notes

For best results, serve immediately after cooking. Leftovers can be stored for up to 3 days and can be frozen for up to 2 months. Reheat gently in a skillet, adding fresh lemon juice or extra butter to revive flavors.
