  • 1/2 cup unsalted butter, melted Ensure it's fully melted for the best texture.
  • 1 cup granulated sugar Regular sugar works best.
  • 1 large egg
  • 1 teaspoon vanilla extract For added flavor.
  • 1 teaspoon lemon zest Freshly grated for maximum flavor.
  • 2 tablespoons lemon juice Freshly squeezed.
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries If using frozen, do not thaw.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper for easy removal.
  2. In a mixing bowl, combine the melted butter and granulated sugar, whisking until it’s well-blended and smooth.
  3. Add the egg, vanilla extract, lemon zest, and lemon juice. Mix until everything is well incorporated.
  4. In another bowl, whisk together the flour, baking powder, and salt until combined, then gradually add it to the wet mixture. Stir until just mixed.
  5. Gently fold in the blueberries, being careful not to crush them.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake in the preheated oven for about 25 minutes or until a toothpick inserted into the center comes out clean with a few moist crumbs clinging to it.
  8. Allow the blondies to cool slightly before cutting them into squares and serving.

Notes

For the best results, use fresh lemons and be careful not to overmix the batter. Store in an airtight container at room temperature for up to 3 days or in the refrigerator for a week. They can also be frozen for up to 2 months.
