Preparation
- Place the chicken cutlets between two sheets of plastic wrap. Use a meat mallet or rolling pin to gently pound them to an even thickness—about 1/2 inch thick.
- In a bowl, combine the lemon juice, lemon zest, chopped basil, olive oil, salt, and pepper to create the marinade.
- Place the chicken cutlets in a shallow dish and pour the marinade over them. Allow to marinate for at least 15 minutes.
Cooking
- Heat a large frying pan over medium heat and add a little olive oil for cooking.
- Once hot, add the marinated chicken cutlets. Cook for about 5-7 minutes on each side or until golden brown and cooked through.
- Remove the chicken from the pan and let it rest for a few minutes.
Serving
- Serve the chicken with additional lemon wedges and a sprinkle of fresh basil for presentation.
Notes
Substitutions include marinating with lime instead of lemon. Ensure the pan is hot to avoid steaming the cutlets.
