Ingredients
  

Pasta and Vegetables
  • 8 ounces pasta (preferably fusilli or penne) Use whole wheat or gluten-free options if needed.
  • 2 cups fresh arugula
  • 1 cup cherry tomatoes (halved)
Dressing
  • 1 whole lemon (juiced and zested) Adjust the lemon juice according to taste.
  • 3 tablespoons olive oil
  • Salt and pepper to taste Salt and pepper Season according to preference.
Toppings
  • 1/4 cup grated Parmesan cheese (or a Halal-friendly alternative)

Preparation
  1. Bring a large pot of salted water to a boil. Add in your pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While pasta cooks, whisk together lemon juice, lemon zest, olive oil, salt, and pepper in a bowl for the dressing.
  3. Once the pasta is cooked, drain and rinse it under cold water. Transfer it to a large bowl and mix in arugula, cherry tomatoes, and the prepared dressing.
  4. Sprinkle the grated Parmesan cheese (or Halal-friendly alternative) over the top and toss everything together gently until well combined.
  5. Taste and adjust seasoning with more salt and pepper if needed.
  6. Serve fresh or chill in the refrigerator for a colder dish.

Notes

For best results, consume within the first day for optimal crunch. Reheat portions in the microwave for 30 seconds before serving, adding fresh lemon or olive oil if desired.
