  • 2 cups cooked rice Day-old rice works best!
  • 1 cup mixed vegetables Carrots, peas, bell peppers
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 pieces green onions, chopped
  • 1 clove garlic, minced
  • 1 piece egg Optional for a protein boost
  • to taste Salt and pepper

Method
 

Preparation
  1. Make sure all your vegetables are chopped and your rice is ready. If using leftover rice, break up any clumps for even cooking.
  2. Place a large skillet or wok over medium heat and add 1 tablespoon of sesame oil. Let it heat up.
  3. Once the oil is hot, add the minced garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn it!
  4. Toss in your mixed vegetables and stir-fry for about 3-5 minutes, or until they are tender but still vibrant in color.
  5. Next, add your cooked rice to the skillet. Use a spatula to break up any chunks and combine everything evenly.
  6. Pour the soy sauce over the rice mixture, mixing well to ensure every grain is coated with flavor. Season with salt and pepper to taste.
  7. If you’re including an egg, push the rice mixture to the side of the skillet and crack it open. Scramble it until cooked, then mix it into the rice.
  8. Finally, fold in the chopped green onions and stir for another minute. Serve hot and enjoy!

Notes

Use day-old rice for the best texture. Customize your vegetables according to your preference. Make sure your pan is hot enough to sauté the vegetables properly.
