Ingredients

For the Marinade
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar adds sweetness and depth
  • 1/4 cup rice vinegar for a touch of acidity
  • 2 tablespoons minced garlic
  • 1 tablespoon grated ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon gochujang Korean chili paste
For the Ribs
  • 2-3 pounds country-style pork ribs
  • 2 stalks green onions, chopped for garnish
  • to taste sesame seeds for garnish

Method

Preparation
  1. In a bowl, whisk together the soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, sesame oil, and gochujang until combined.
  2. Place the ribs in a large resealable bag or a deep dish and pour the marinade over them. Seal the bag or cover the dish tightly and let the ribs marinate in the refrigerator for at least 30 minutes, preferably overnight.
Cooking
  1. Preheat your grill to medium-high heat or heat a large skillet over medium-high heat.
  2. Remove the ribs from the marinade (reserving the marinade) and place them on the grill or in the skillet.
  3. Cook for about 5-7 minutes per side, basting with the reserved marinade until the ribs are cooked through and caramelized on the outside.
Serving
  1. Once the ribs are done, take them off the heat, sprinkle with chopped green onions and sesame seeds. Serve hot.

Notes

For a well-rounded meal, serve with steamed white rice or crispy fried rice and add some roasted veggies or a refreshing cucumber salad. Marinate ribs overnight for better flavor.
