Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, sugar-free barbecue sauce, softened cream cheese, cauliflower rice, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
- Sprinkle the shredded cheddar cheese over the top of the casserole, adding extra if you desire.
Baking
- Place the baking dish in the oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Once done, remove from the oven and allow it to cool for a few minutes. Garnish with green onions or parsley if desired before serving.
Notes
If you have leftover casserole, store it in an airtight container in the fridge for up to 3 days. Reheat in a microwave or preheated oven at 350°F until warmed through. Feel free to add sautéed onions and peppers for extra flavor. For a cheese swap, try Monterey Jack or pepper jack for a spicy kick.
