Ingredients
  

Casserole Base
  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 1 cup sugar-free barbecue sauce
  • ½ cup cream cheese, softened
  • 1 cup cauliflower rice (fresh or frozen)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
Topping
  • 1 cup shredded cheddar cheese (plus more for topping, if desired)
  • to taste sliced green onions or parsley (for garnish, optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, sugar-free barbecue sauce, softened cream cheese, cauliflower rice, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  4. Sprinkle the shredded cheddar cheese over the top of the casserole, adding extra if you desire.
Baking
  1. Place the baking dish in the oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
  2. Once done, remove from the oven and allow it to cool for a few minutes. Garnish with green onions or parsley if desired before serving.

Notes

If you have leftover casserole, store it in an airtight container in the fridge for up to 3 days. Reheat in a microwave or preheated oven at 350°F until warmed through. Feel free to add sautéed onions and peppers for extra flavor. For a cheese swap, try Monterey Jack or pepper jack for a spicy kick.
