  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 0.5 cup vegetable oil Can substitute with melted butter.
  • 1 teaspoon vanilla extract
  • 0.5 cup milk Greek yogurt can be used for added moisture.
Add-ins
  • 1 cup chopped pecans

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, combine the dry ingredients: flour, baking powder, baking soda, cinnamon, granulated sugar, brown sugar, and salt. Whisk until well blended.
  3. In another bowl, beat the eggs, then add the vegetable oil, vanilla extract, and milk. Mix well until combined.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing; a few lumps are okay!
  5. Gently fold in the chopped pecans, ensuring even distribution throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth out the top with a spatula.
Baking
  1. Place the pan in the preheated oven and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  2. Once baked, allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For best results, measure flour correctly and avoid overpacking to prevent a dense loaf. Store in an airtight container for up to three days or freeze for up to three months.
