Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a large bowl, combine the dry ingredients: flour, baking powder, baking soda, cinnamon, granulated sugar, brown sugar, and salt. Whisk until well blended.
- In another bowl, beat the eggs, then add the vegetable oil, vanilla extract, and milk. Mix well until combined.
- Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing; a few lumps are okay!
- Gently fold in the chopped pecans, ensuring even distribution throughout the batter.
- Pour the batter into the prepared loaf pan and smooth out the top with a spatula.
Baking
- Place the pan in the preheated oven and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
For best results, measure flour correctly and avoid overpacking to prevent a dense loaf. Store in an airtight container for up to three days or freeze for up to three months.
