  • 12 oz bow tie pasta (farfalle) Cook according to package instructions.
  • 1 lb Halal Italian sausage, casings removed Can substitute with ground chicken or turkey.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium bell pepper (any color), diced
  • 14 oz can diced tomatoes, with juices
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon red pepper flakes (optional for heat) Adjust according to heat preference.
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • Fresh basil or parsley for garnish Optional.
  • Grated Parmesan cheese for serving Optional.

Cooking
  1. Begin by boiling a large pot of salted water. Once boiling, add the bow tie pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water for later use.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, sautéing for about 3-4 minutes until softened. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add the Halal Italian sausage to the skillet, breaking it into chunks with a spatula. Cook until browned and thoroughly cooked, approximately 5-7 minutes.
  4. Stir in the diced tomatoes (with their juices), Italian seasoning, red pepper flakes (if using), salt, and pepper. Let this simmer for around 5 minutes to meld the flavors.
  5. Add the cooked bow tie pasta to the skillet, tossing everything together. If the mixture seems too dry, add a splash of the reserved pasta water.
  6. Divide among plates, garnishing with fresh basil or parsley and a sprinkle of grated Parmesan cheese, if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze individual portions for up to three months. Reheat with a splash of water or olive oil.
