  • 1 pound Halal Italian sausage Remove casing if necessary
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or coconut cream
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • to taste fresh parsley for garnish (optional)

Cooking Steps
  1. In a large pot over medium heat, add the olive oil. Once hot, add the Halal Italian sausage and cook for about 5-7 minutes or until browned and crumbly.
  2. Stir in the chopped onion and minced garlic, cooking until the onion becomes translucent, about 3-5 minutes.
  3. Pour in the diced potatoes and the chicken or vegetable broth. Add the Italian seasoning, salt, and pepper. Stir well to combine and bring to a boil.
  4. Reduce the heat to low and let the soup simmer for about 25 minutes, or until the potatoes are tender when pierced with a fork.
  5. Stir in the heavy cream or coconut cream, allowing the soup to heat for an additional 5 minutes. Taste and adjust seasoning as necessary.
  6. Ladle the soup into bowls, topping with fresh parsley if desired. Enjoy your deliciously creamy soup with crusty bread or crackers!

Notes

If you’d like to experiment, you can substitute the Halal Italian sausage with ground turkey or chicken seasoned with Italian herbs for a lighter option. Allow the soup to simmer long enough for flavors to develop and check the potatoes for doneness after the first 20 minutes of simmering.
