Preparation
- Preheat your oven to 350°F (175°C).
- If using fresh pumpkin seeds, rinse them to remove any pulp and let them dry.
- In a mixing bowl, combine the pumpkin seeds, olive oil, smoked paprika, garlic powder, cumin, and a pinch of salt. Toss until well-coated.
- Line a baking sheet with parchment paper and spread the seasoned seeds in a single layer.
Baking
- Place the baking sheet in the oven and bake for 12-15 minutes, shaking the pan every 5 minutes for even roasting.
- Once the seeds are golden and aromatic, remove them from the oven and let cool completely.
Serving
- Serve as a snack, on a charcuterie board, or as a topping for salads. Enjoy with hummus or guacamole.
Notes
Store in an airtight container at room temperature for up to one week. For longer storage, freeze for up to three months. Reheat in the oven to revive crunchiness.
