  • 1 pound ground beef or chicken (make sure it’s halal)
  • 1/2 cup breadcrumbs (preferably whole wheat)
  • 1/4 cup grated Parmesan cheese (halal)
  • 1/4 cup finely chopped parsley
  • 2 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • to taste Salt and pepper
  • 1 large egg, lightly beaten
For the Subs
  • 4 pieces sub rolls or hoagie buns
  • 2 cups marinara sauce (store-bought or homemade)
  • 1-2 cups shredded mozzarella cheese
  • to taste Fresh basil (optional for garnish)

Method
 

Preparation
  1. Preheat the Oven: Start by preheating your oven to 375°F (190°C). This will ensure that your meatballs cook evenly.
  2. Prepare the Meatball Mixture: In a large bowl, combine the ground meat, breadcrumbs, grated Parmesan, parsley, minced garlic, Italian seasoning, salt, pepper, and the beaten egg. Mix until just combined—take care not to overmix.
  3. Shape the Meatballs: With wet hands, shape the mixture into meatballs about the size of golf balls. Arrange them on a baking sheet lined with parchment paper.
Cooking
  1. Bake the Meatballs: Bake in your preheated oven for 20-25 minutes or until they are fully cooked and golden brown.
  2. Warm the Marinara Sauce: While your meatballs are baking, heat the marinara sauce in a saucepan on low heat.
Assembly
  1. Assemble the Subs: Once the meatballs are done, place 3-4 meatballs in each sub roll, generously ladling marinara sauce over them.
  2. Add the Cheese: Top with shredded mozzarella cheese—feel free to be generous here!
  3. Final Bake: Return the assembled subs to the oven for an additional 5-10 minutes, or until the cheese is bubbly and golden brown.
  4. Garnish and Serve: Remove from the oven, garnish with fresh basil if desired, and serve hot.

Notes

Storing leftover subs is easy! Place them in an airtight container and refrigerate for up to 3-4 days. For longer storage, freeze meatballs separately for up to 3 months.
