  • 1/4 cup soy sauce, low-sodium preferred
  • 1/4 cup honey
  • 2 tablespoons fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon sesame oil

Preparation
  1. Preheat your oven to 400°F (200°C) for even cooking.
  2. In a mixing bowl, whisk together soy sauce, honey, grated ginger, minced garlic, vinegar, and sesame oil until well combined.
  3. Season the chicken thighs generously with salt and pepper on both sides. Place them skin-side up in an oven-safe dish.
  4. Pour half of the ginger soy mixture over the chicken thighs, ensuring they are well coated.
Cooking
  1. Place the dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).
  2. For extra sticky goodness, switch the oven to broil for the last 5 minutes of cooking, watching closely to avoid burning.
  3. Remove from the oven, let it rest for a few minutes, then drizzle the remaining glaze over the top. Garnish with chopped green onions and sesame seeds before serving.

Notes

For best flavor, marinate the chicken overnight. Excess fat can be trimmed for a healthier meal. Try different toppings like crushed peanuts or cilantro for added texture.
