Preparation
- Start by seasoning your chuck roast with salt and pepper generously.
- Heat a little oil in a skillet over medium-high heat and sear the roast on all sides until browned.
Cooking
- Place the seared roast into your slow cooker.
- Sprinkle the onion soup mix over the top and pour in the beef broth.
- Cover the slow cooker and set it to low for about 7-8 hours, or until the beef is easy to shred.
Finishing Touches
- After cooking, carefully remove the roast from the slow cooker.
- Using two forks, shred the beef, discarding any large chunks of fat.
- If you’d like, strain the broth to remove any solids, leaving a delicious au jus.
- Assemble the sandwiches by placing a generous portion of shredded beef onto each roll.
- Top it off with your choice of cheese or other toppings, and serve with a bowl of au jus on the side for dipping.
Notes
Searing the beef enhances its flavor. Substitute broth as desired, but it may alter the taste. Try various cheeses for different flavors. Cooking on high is an option but results in less tenderness.
