- Bring a large pot of salted water to a boil. Add the tortellini and cook as per package instructions, usually about 3-5 minutes until they are al dente. Drain and rinse under cold water to stop the cooking process.
- While the tortellini is cooking, prep the salami, mozzarella, cherry tomatoes, cucumber, bell pepper, and red onion.
- In a small bowl, mix together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper. Whisk until well combined.
- In a large salad bowl, combine the cooked tortellini, diced salami, mozzarella balls, cherry tomatoes, cucumber, bell pepper, and red onion.
- Drizzle the dressing over the salad mix, and toss gently to combine all ingredients well.
- Garnish with fresh basil leaves before serving.
Notes
For optimal flavor, let the salad marinate in the dressing for at least 15 minutes before serving. You can swap out salami for pepperoni or add seasonal veggies to customize your salad.
