Preparation
- Preheat your oven to 425°F (220°C).
- Peel, core, and slice the apples into thin pieces. In a large mixing bowl, toss the apple slices with lemon juice, sugar, cinnamon, nutmeg, flour, and a pinch of salt.
- If using store-bought crusts, follow the package directions. For homemade crust, roll it out on a floured surface until it's about 1/8 inch thick.
Assembly
- Place one pie crust into a 9-inch pie dish, pressing it down gently.
- Fill the crust with the apple mixture, mounding it slightly in the center. Dot the top with small pieces of butter.
- Cover the apple filling with the second pie crust. Cut slits in the top to allow steam to escape. Seal the edges by crimping them with a fork or your fingers.
Baking
- Bake the pie in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Allow the pie to cool for at least two hours before slicing.
Serving
- Serve warm or at room temperature.

For a perfect pie: mix apple varieties for flavor, consider adding vanilla extract or allspice, pre-bake the bottom crust to avoid sogginess, and monitor baking time.
