  • 4 oz feta cheese, cbled Adjust amount to taste.
  • ½ cup walnuts or pecans, toasted Use whichever you prefer.
  • 4 cups mixed salad greens (such as Spinach, Arugula, or Romaine)
  • ¼ cup dried cranberries Optional for added sweetness.
Dressing Ingredients
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Method
 

Preparation
  1. Wash the salad greens and pat them dry. Core and slice the Honeycrisp apples into bite-sized pieces.
Toast the Nuts
  1. In a dry skillet over medium heat, toast the walnuts or pecans for about 3-4 minutes, stirring frequently. Remove from heat and let them cool slightly.
Mix the Dressing
  1. In a small bowl or jar, combine the olive oil, balsamic vinegar, salt, and pepper. Whisk or shake well until emulsified.
Combine the Salad
  1. In a large bowl, layer the mixed greens, sliced apples, toasted nuts, and cranberries if using. Top with cbled feta cheese.
Dress and Serve
  1. Drizzle the dressing over the salad and gently toss to combine everything evenly. Serve immediately.

Notes

For a nuttier flavor, substitute feta with goat cheese or omit nuts for a nut-free option. Adding fresh herbs like mint or basil can enhance flavor. For more protein, consider grilled chicken or chickpeas.
