  • 2 cups raw pumpkin seeds (cleaned and rinsed)
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon (optional) for an extra spice kick
  • a dash cayenne pepper (optional) for those who like a bit of heat

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Rinse the fresh pumpkin seeds thoroughly under cold water and pat them dry with a paper towel.
  3. In a large mixing bowl, combine the cleaned pumpkin seeds, honey, olive oil, salt, and any optional spices. Stir until the seeds are well coated.
  4. Line a baking sheet with parchment paper and spread the mixture evenly across it.
Roasting
  1. Place the baking sheet in the preheated oven and roast for about 25 minutes, stirring halfway through.
  2. Once golden brown, remove from the oven and let cool for a few minutes.

Notes

Store in an airtight container for 1-2 weeks. They can be enjoyed straight from the container.
