  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves (plus extra for garnish)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, toss the peeled and chopped carrots with olive oil, honey, fresh thyme, salt, and pepper until evenly coated.
  3. Spread the carrots out in a single layer on a baking sheet lined with parchment paper.
Cooking
  1. Place the sheet in the preheated oven and roast for about 25 minutes, stirring halfway through.
  2. Once the carrots are tender and caramelized, sprinkle crumbled goat cheese over the top and return to the oven for an additional 5 minutes.
Serving
  1. Remove from the oven, garnish with extra thyme if desired, and serve warm.

Carrot Choices: Use rainbow carrots for variety or baby carrots with slight adjustments to roasting time. Ensure not to over-roast to avoid mushiness. For extra flavor, add cinnamon or nutmeg to the honey mixture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
