- Spread the carrots out in a single layer on a baking sheet lined with parchment paper.
Cooking
- Place the sheet in the preheated oven and roast for about 25 minutes, stirring halfway through.
- Once the carrots are tender and caramelized, sprinkle crumbled goat cheese over the top and return to the oven for an additional 5 minutes.
Serving
- Remove from the oven, garnish with extra thyme if desired, and serve warm.
