  • 4 pieces boneless, skinless chicken breasts Ensure fully thawed before cooking.
  • ¼ cup honey
  • 3 tablespoons mustard (Dijon or yellow) Can substitute with whole grain mustard.
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) before beginning preparation.
  2. Season both sides of the chicken breasts with salt and pepper.
Cooking
  1. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  2. Once the oil is hot, add the chicken breasts. Cook for about 5 minutes on each side or until golden brown.
  3. While the chicken is cooking, whisk together honey and mustard in a bowl until well combined.
  4. After searing, pour the honey-mustard mixture over the chicken breasts, making sure each piece is well coated.
  5. Sprinkle cheddar cheese generously on top of the chicken.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is fully cooked and the cheese is bubbly.
  7. Remove from the oven and let it cool for a few minutes before serving.

Notes

For varied flavor, consider sweetening with agave syrup, and use a meat thermometer to check for an internal temperature of 165°F (75°C). Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
