Preparation
- Preheat your oven to 375°F (190°C) before beginning preparation.
- Season both sides of the chicken breasts with salt and pepper.
Cooking
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Once the oil is hot, add the chicken breasts. Cook for about 5 minutes on each side or until golden brown.
- While the chicken is cooking, whisk together honey and mustard in a bowl until well combined.
- After searing, pour the honey-mustard mixture over the chicken breasts, making sure each piece is well coated.
- Sprinkle cheddar cheese generously on top of the chicken.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is fully cooked and the cheese is bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
For varied flavor, consider sweetening with agave syrup, and use a meat thermometer to check for an internal temperature of 165°F (75°C). Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
