  • 1/4 cup honey Can be substituted with maple syrup for a different sweetness.
  • 1/4 cup mustard Yellow or Dijon mustard both work well.
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels to ensure the marinade adheres better.
  3. In a mixing bowl, combine honey, mustard, olive oil, garlic powder, onion powder, salt, and pepper. Stir until well blended.
  4. Marinate the chicken thighs in the bowl, thoroughly coating each piece. For best results, let it marinate in the refrigerator for at least 30 minutes or proceed immediately if short on time.
Cooking
  1. Arrange the marinated chicken on a baking tray lined with parchment paper. Pour any remaining marinade over the chicken.
  2. Bake in the preheated oven for 30–35 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy and caramelized.
  3. Allow the chicken to rest for a few minutes before serving.

Notes

For an alternate flavor, substitute maple syrup for honey, or use spicy brown mustard for a kick. Ensure chicken pieces are similar in size for even cooking. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for 2 months. Reheat in the oven at 350°F (175°C) for 15-20 minutes.
