  • 1 pound baby carrots (or regular carrots cut into sticks)
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 3 cloves garlic, minced Fresh garlic adds depth

For garnish
  • to taste Fresh parsley or thyme Optional for garnishing

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. If using regular carrots, peel and cut them into sticks about 2-3 inches long. If using baby carrots, rinse and keep them whole.
  3. In a mixing bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until well combined.
  4. Toss the carrots in the honey garlic mixture until fully coated.
  5. Arrange the coated carrots in a single layer on a baking sheet lined with parchment paper.
Roasting
  1. Place the baking sheet in the oven and roast for about 25-30 minutes, stirring halfway through.
Serving
  1. Once roasted, sprinkle fresh parsley or thyme on top for a finishing touch. Serve warm and enjoy!

Notes

Choose firm, brightly colored carrots for the best flavor. Adjust garlic based on preference. Store leftovers in an airtight container for 3–5 days; reheat at 350°F (175°C) for 10-15 minutes or sauté in a pan.
