Main Ingredients
  • 1 pound chicken breast, cubed Can substitute with boneless chicken thighs for added juiciness.
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 bell pepper, cut into chunks Adds color and flavor.
  • 1 onion, cut into chunks Adds flavor and texture.
  • to taste Salt and pepper
  • as needed Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes to prevent burning.

Method
 

Marination
  1. In a bowl, combine the honey and BBQ sauce. Add salt and pepper to taste.
  2. Toss the cubed chicken breast in the marinade, ensuring each piece is well-coated.
  3. Let it marinate for at least 15 minutes (or longer if you can wait!).
Preparation
  1. While the chicken is marinating, cut the bell pepper and onion into large chunks.
  2. Preheat the grill to medium-high heat, or preheat the oven to 400°F (200°C).
Assembly and Cooking
  1. Thread the marinated chicken, bell pepper, and onion onto the skewers, alternating between the chicken and vegetables.
  2. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally.
  3. If using an oven, place them on a baking sheet and cook for about 20 minutes, turning halfway.
Serving
  1. Once cooked, remove from the grill or oven, let them rest for a couple of minutes, and serve hot.
  2. Drizzle any leftover marinade over the top for extra flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
