Marination
- In a bowl, combine the honey and BBQ sauce. Add salt and pepper to taste.
- Toss the cubed chicken breast in the marinade, ensuring each piece is well-coated.
- Let it marinate for at least 15 minutes (or longer if you can wait!).
Preparation
- While the chicken is marinating, cut the bell pepper and onion into large chunks.
- Preheat the grill to medium-high heat, or preheat the oven to 400°F (200°C).
Assembly and Cooking
- Thread the marinated chicken, bell pepper, and onion onto the skewers, alternating between the chicken and vegetables.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally.
- If using an oven, place them on a baking sheet and cook for about 20 minutes, turning halfway.
Serving
- Once cooked, remove from the grill or oven, let them rest for a couple of minutes, and serve hot.
- Drizzle any leftover marinade over the top for extra flavor.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
