Ingredients
  

For the Chicken
  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil For cooking the chicken

For the Sauce
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
For the Bowl
  • 2 cups cooked rice Base for the dish
  • 1 cup mixed vegetables (bell peppers, broccoli, corn) For added nutrition and color
  • Chopped green onions For garnish

Method
 

Preparation
  1. Start by dicing 1 pound of chicken breast into bite-sized pieces. Season the chicken with salt and pepper to taste.
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil and then the seasoned chicken. Sauté for about 5-7 minutes or until the chicken is fully cooked and golden brown.
Cooking
  1. In a small bowl, mix together 1/2 cup of honey and 1/2 cup of BBQ sauce until well combined. Pour this mixture over the cooked chicken in the skillet.
  2. Toss in 1 cup of mixed vegetables (bell peppers, broccoli, and corn) and stir everything together. Cook for another 3-5 minutes, allowing the veggies to heat through and absorb the sauce.
Serving
  1. To assemble, spoon 2 cups of cooked rice into individual bowls and top with the honey BBQ chicken and vegetable mixture. Garnish with chopped green onions.
  2. Enjoy your flavorful bowl of goodness!

Notes

Substitute ground chicken or turkey for a leaner option. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 2 months.
