Ingredients

For the chicken skewers
  • 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup honey Use high-quality honey for better flavor.
  • ½ cup barbecue sauce Choose your favorite variety.
  • ¼ cup beer (optional, can be substituted with chicken broth) Beer helps to tenderize the chicken.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • skewers (if using wooden skewers, soak them in water for 30 minutes beforehand)

Method

Marination
  1. In a bowl, mix together honey, barbecue sauce, beer, olive oil, minced garlic, salt, and pepper. Add the chicken pieces and stir well to coat all the pieces. Cover and let marinate for at least 30 minutes in the refrigerator.
Preparation
  1. If you're using wooden skewers, ensure they have soaked in water to prevent burning.
Assembling
  1. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
Grilling
  1. Preheat your grill to medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F and has nice grill marks.
Serving
  1. Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving. You can brush some extra honey BBQ sauce for added glaze and flavor if desired!

Notes

These skewers can be served with fresh coleslaw, quinoa salad, sweet potato fries, or grilled corn. Keep an eye on the chicken while cooking to avoid overcooking.
